BBQ Roast Rib of Beef
Rib of beef
Ingredients
- 1 Rib per person for large appetites, 1 rib for two for a smaller portion
Cooking Method
- Set up the barbecue for roasting. Remove the beef from the fridge well ahead of cooking to come to room temperature
- Season the meat to you taste. Black pepper, mustard and chilli are all good
- Once the barbecue is ready place the beef, cut side down, directly over the heat
- After 2 or 3 minutes turn over. This will give an extra bit of flavour
- Allow to cook for a further 2 or 3 minutes
- Place the beef in the centre of the barbecue between the two piles of charcoal
- Put the lid on and leave. A 2 rib piece of meat will take about 45 minutes. Check and serve as you like it
- Once cooked to your liking leave to rest for at least 10 minutes
- Serve thick slices. Bear in mind the ends will be more well done than the centre
